Low Carb + Gluten Free

I know that, in my last post, I mentioned that I would be transitioning myself to a paleo diet, but I’ve been following a more low carb and gluten free diet instead. 

A month ago was told by my doctor that my blood sugar is higher than it should be and that many of the ailments I’d been struggling with (asthma, eczema, dry skin, headaches, fatigue) could be a result of my eating habits. She urged me to make immediate dietary changes, saying that I should feel better almost immediately. 

Boy, so much can change in a month! Since the change, I don’t feel as bloated anymore. My fatigue is minimal, and my headaches occur less frequently (though can still be pretty severe). I always knew that I was consuming too much junk and sugar (I have a major sweet tooth!), but I didn’t let myself believe that my health could be affected by it. I was oblivious. My eating habits have changed in a very positive way in the last 30 days, and I no longer have overpowering cravings for junk food like I used to. My cravings have shifted from hamburgers and ice cream to turkey patties and strawberries with peanut butter.

I want to share with you, honestly, in what ways my diet has changed. Below, you will see a chart showing my nutritional information on any given day before I made my lifestyle change. You can see that my daily carbohydrate intake was off the charts. Literally! I can’t believe I was consuming so many carbs! 

Here is the same chart with the nutrition information for an average day now that I am more consience of my carbohydrate intake.    

What a difference! My goal is to consume no more than 130g (roughly 40% of my daily caloric intake) of carbohydrate on any given day. Most days, I stay between 80-100g. I can’t believe that close to 50% of my diet was carbs before. The fats I was consuming before came from garbage: chips, candies, crackers, burgers, fries, etc. My fats now come from healthier places: peanut butter, raw pumpkin seeds, coconut oil, protein bars, and almonds, for example.

I feel so much better now. My mind is less foggy, my mood is more positive, and I have more motivation to get up and get things done. I’m more motivated than ever to get off the couch and hit the gym! I’m losing weight more quickly (7lbs in the last month – 17 pounds in all since I began my fitness journey last Summer) and have lost 3% body fat already! I’m confident that I will finally achieve my goal of feeling comfortable in my own skin. Maybe next summer I can shop for the cutest, hippest bikinis :).

“Open this when… you are feeling generous!”

My best friend, Ashley, is the QUEEN of sentimental gift-giving. Our friendship is long distance (Texas – California), and she definitely puts me to shame with her extraordinary gifting skills! I appreciate that she is always so thoughtful and sincere. For this past Christmas, she sent me a box full of “Open When…” cards to enjoy throughout the year. The cards range from “Open when… you are happy!” to “Open when… you don’t feel appreciated.” Every emotion is perfectly captured and trapped within the walls of an envelope inside this box of her love. Each card is either hand-picked with much thought or hand-decorated for a personal touch. I opened a card yesterday and its message has really stuck with me.

Written across the white envelope in green ink is, “Follow your ❤️.” Nestled inside, a card with a photo of a Congolese village’s harvest and beautifully written message of giving. I am, by nature, a giving person. As a daughter, sister, wife, teacher, and friend… I am generous. I give without the expectation of receiving and love to see the expressions of joy from those to whom I give. The old adage says, “‘Tis better to give than to receive,” and it rings so true for me. I get a rush from seeing people happy and knowing that I took part in it. I wear my heart on my sleeve and am forever thinking of others. Mother Teresa once said, “It’s not how much we give but how much love we put into giving.” Isn’t that just beautiful?

Just as Ashley has encouraged me, I encourage you… give.

Make a difference in someone’s day… or life.
Put a smile on the face of someone you love… or that of a stranger’s.
Give not monetarily, but of your time instead.

Go Float!

Holy cow.

For Valentine’s Day this year my husband and I decided to go to a flotation spa in Houston named True Massage Flotation Spa instead of braving the crowds to go to dinner on a crazy night.

I was unsure of what to expect. I mean.. Come on. How often do you strip down to your birthday suit and float in a UFO-esque “pod” full of salt water? If you’re me.. the answer is never!

Well, I did just that. The owner, very enthusiastically, told us all about what to do and what to expect. First step is to shower, second step is to step in and relax. The last step is to shower off to remove salt residue. 

 My experience was much different than my husband’s. He spent his entire 60 minute float time “sloshing around” in the float tank like a giant kid (his own words, I swear!) haha. I spent my entire 60 minute float relaxing and breathing deeply (as instructed). We were told by the owner that during a relaxing float session, the mind may enter into “Theta Brain.” We were warned not to “freak out” and that everything we may experience is “normal.” Theta Brain is defined as a state of mind that has no bridge between the subconscious and the conscious mind. Theta Brain is a state of very deep relaxation, and is used in hypnosis and during REM Sleep. The brain waves are slowed down at a frequency of 4-7 cycles per second. 

 I entered the warm pod, and assumed a comfortable floating position (both hands above my head) and breathed deeply in and out. The lull of ocean sounds and soft lights was very calming. I continued to breath deeply and soon I felt myself begin to drift in and out of sleep. While Hubby sloshed around in the other room, I was slowly entering the Theta Brain State and began to see flashes of yellow and green in the pitch black pod. At first, I couldn’t help but try to “blink them away,” but it quickly became quite enjoyable.

Just as I began to really relax and enjoy my float, I heard my name and a tap on the door of my pod. My time was up! Boooo! I truly enjoyed this experience and I will definitely be back to enjoy it again :).

Farewell to 2014

While 2014 was full of opportunity, I’m happy to see it off because I know that 2015 holds even more promise!

In 2014, we tried to have a baby with the use of injectable medicine. Did it work? No. Did we learn from our experience? Absolutely. Although heartbroken at the time, we walked away with new goals. I lost 13 pounds, and have changed my eating habits and become more active.

In 2015, I hope to complete the foster-to-adopt paperwork and process with Hubby. Maybe we can have a little one in our home by the end of the year (thinking ahead, much?). I will also be working on losing at least another 15 pounds and becoming more consistent with my healthy eating habits.

News!

Hubby and I have spoken very seriously about me going back to school this year. The university I’m interested in attending has an online program for the degree I want to pursue (M.Ed. in Educational Administration), so it’s totally doable! I absolutely need to have my masters so I can further myself in my career and achieve my goals in life.

On a personal note, because of my love for pretty nails, I’ve started selling Jamberry! I absolutely love the nail wraps – especially on my toes! With over 250 designs to choose from, my head is spinning with what choices to make, and I definitely feel like a kid in a candy store! And… Last but not least – how am I doing with my lifestyle change? Well.. I haven’t been working out. Like.. At all. BUT… my kiddos at work keep me moving all day long, so I don’t ever sit down or have a moment to relax. I’m on my feet and moving for a solid 8-10 hours a day Monday-Friday. As well as that, I’m still watching what I eat (but still treat myself when I feel like it). I know I’m not eating as healthy as I should be, but a LOT better than I used to before making a change. Since June 15th, I’ve lost 11.5 pounds! I’m so incredibly proud of myself. My family is starting to notice, and their comments keep me motivated to keep it up. I told my husband today, that I really feel like I could be in a bikini next year. As an adult, I’ve never felt comfortable enough with my body to wear anything other than a tankini out in public. The tankini has to be long enough to completely cover my midriff, and I prefer bottoms that are like short short bottoms.. so I can keep myself covered. I’m reallllllly hopeful that I can kick myself into gear again and start working out again so that I can comfortably flaunt my new body in a bikini next year. I guess this blog will help me keep myself accountable. I wrote it for you all to read, so now I have to stick to it, don’t I? (Please say yes! 😉)

Now for baby news…
Wouldn’t it be nice if I had some? All I have to say is that hubby and I are looking into possibly taking out a loan so we can apply for traditional adoption. I want the entire baby experience.. crying, diapers, and all! Fostering to adopt will not provide us with that experience. When we are ready for our second little one, I would love to follow through with fostering to adopt.

Summer is Officially OVER!

For teachers, the summer comes to an end at the beginning of August, and you know what?

I kinda like it.

It feels good to be back in the classroom. Organizing, seat arranging, posting motivational words around the room.. I feel alive again! Like my life has a true purpose once more.

Although I’m extremely excited to be getting back into the “groove,” I’m also also feeling a little overwhelmed.

Goodbye to the many summer projects I was dying to complete that were never started.. Until we meet again next year!

I did get one thing done, though! Lol

I completed a bucket seat for my small group table. I’m going to use these bad boys to secretly store classroom supplies (Shh! Don’t tell! 😉)

Although I’m back in my classroom and back in school for PDs, I still have a couple little projects I plan on completing before school gets started on the 25th, but we’ll see if they actually get done or not! I’m really hoping they do 😀!

I can’t wait to show y’all my classroom!

8.5 Down!

Wahoo! I’m 8.5 pounds down from where I started on June 15th. My hubby has told me over and over this weekend how great I look, and that he is so proud of me.

Although I’m constantly hungry for snacks and munchies, it’s so worth not eating them when I notice my jeans are feeling looser. It’s also pretty darn fantastic not having a muffin top when I wear pants 😉.

I have really noticed a difference in my neck/collarbone area and my back. Thanks to this extra little boost in confidence, I actually wore a beautiful top I bought from New York & Co. that has an open back with just a bralette underneath. If you had asked me to wear the same outfit out in public this time last year, I would have laughed in your face!

Bye Bye Vacation, Hello Real World!

Cancun was great!

Here’s a breakdown of some of our activities, along with star ratings out of five.

AeroMexico (⭐️⭐️⭐️⭐️)
Loved this airline! Even though our flights were only two and a half hours each, we were provided with food each way. On the flight to Cancun we were given a sandwich and chips, and on the flight back home we were given a sandwich and container of arroz con leche. The flight attendants were very friendly and helpful, making the flight rather enjoyable. Our favorite thing about this airline was the inflight entertainment system. Each seat has a screen in front of it, with full, FREE access to newly released movies, tv series, and music. Time definitely flew by for us aboard our flights!

Krystal Grand Punta Cancun (⭐️⭐️)
This is a great hotel to stay in if you’re on a budget, but be weary of a few things.. The elevators will take at least 5 minutes to open for you, and are often “broken.” We once stood around for 20 minutes for the elevator. Stairs are not easily accessible to the guests.. And honestly, we couldn’t find them when we tried! The construction in the lobby and around the grounds starts at about 7 every morning and stops late at night. The lobby is in the center of the hotel, with everything spiraling upward from it in circles, so you can hear everything that’s going on outside your hotel room door. The walks are incredibly thin, and you can clearly hear your obnoxious neighbors stumbling in drunk at 3 in the morning and continuing the party in the room for an hour until they pass out. There is an OXXO located right across the hotel for any snack or toiletry needs that is much more reasonably priced than the store in the hotel lobby. Our walk down to the beach was short, and the water was beautiful!

Beach (⭐️⭐️⭐️⭐️)
Beautiful, crystal clear, blue water and white sand! Marvelous! The only reason I didn’t give the beach 5 stars is because parts of the beach had very sharp, jagged sand with shells in it that hurt to walk through.

Food (⭐️⭐️)
As Texas residents, we are spoiled with amazing food of all kinds! As first time visitors to Cancun, we were tying excited to eat some “authentic Mexican food.” Unfortunately, we didn’t really have any! The best food we had all week came from a place in La Isla Shopping Village called Jugo de Limón and a buffet we visited with a tour to Chichen Itza located in the magical town of Valladolid. Overall, the food was not as great as we expected it to be.

Xplor (⭐️⭐️⭐️)
This tour provides a full day of thrill and excitement. Right? Eh.. Kind of. The adventure park advertises 2 zip line circuits, amphibious vehicles, underground river rafting, and an underground river/cenote to swim in. The first activity we participated in was the zip like. We were so excited! As we had our harnesses put on, we were told that each circuit would take 45 minutes – 1.5 hours to complete both. On the contrary, it took us closer to 1 hour to complete the first course, and it was already lunch time. We decided we had had enough fun and adventure on the first circuit and that we’d like to experience the other activities. On our way to the buffet for lunch, we ended up jumping into the river for a swim. A life best is required to swim at the park. The swim around the river was beautiful! Clear blue water, tiny fish swimming around you, bats flying overhead, trickling water, waterfalls, and stalactites/stalagmites all around. The buffet was good. Not great… I are a hamburger and a couple potato wedges. For dessert, we tried a bit if everything together – caramel flan, bananas in cream, arroz com leche, froyo (too slushy), and dragon fruit! If you can’t tell… Dessert was my favorite part of the meal! After lunch, we headed to the amphibious vehicles. We waited in line for about 30-40 minutes. This activity was the least fun for us.. There was hardly any water. We drive through a couple puddles maybe a foot deep. This was super disappointing because they’re advertised to be so thrilling! They were, instead, quite a bore. After all this, we only had time for one more short activity.. So we jumped in the river again for a long swim, after which we had to get dressed and start heading to drop off our helmets (had to wear them all day) and locker keys. For the money that we paid ($170 each), we were really disappointed to big be able to complete all the activities. One thing we really did appreciate was that there are cameras scattered around the park that take photos of you which can be purchased at the end of your day. We paid $80 for all of out photos, and it was totally worth not having to lug a camera around everywhere!

Xichen Deluxe Chichen Itza Tour (⭐️⭐️⭐️⭐️⭐️)
Our tour guide, Raquel, and bus driver, Hector, were FANTASTIC! We had a blast on this tour and can’t say enough great things about it! The bus ride to and from Chichen Itza took about two hours each way. On the way to the ruins, we watched a video about Mayan prophecy and learned about the culture. On the way back, we watched Non-Stop, starting Liam Neeson and Julianne Moore (good movie)! The ruins were breath taking, Valladolid was beautiful, and the Zací cenote looked refreshing (we didn’t have time to hop in on the deluxe tour). This tour was incredible! We definitely recommend it for anyone visiting the area. The only thing that was really disappointing to us was that people are no longer allowed to touch or go inside the ruins. It stinks that the actions of one individual can ruin the fun for everyone else. Regardless, the experience of seeing one of the Wonders of the World was amazing!

Street Vendors (⭐️⭐️⭐️)
Some street vendors have very unique items to sell, however, most sell the exact same things. I fell in love with one little boy, and visited him and his mother to buy handmade bracelets from them everyday. I’d love to give the street vendors a higher rating, but you see the same stuff everywhere you go. The things we saw for sale in
Chichen Itza and Valladolid were much more unique than the things being sold in Cancun, though. I will give them credit for that :).

Excursion Salesmen (⭐️)
Seriously? These people made leaving our hotel everyday such a dreadful experience. Every day, every time you walk by, you’re asked to stop and look at the tours they offer. These stands are located every block or so, down both sides of the street..So literally, every few minutes you have to say “No thank you, we’ve already purchased some.” “No, gracias!” or “We’ve already gone. Thank you.” It’s super exhausting saying no to that many people. This is the largest contributing factor to us not wanting to visit Cancun again.

Atmosphere (⭐️⭐️)
Another contributing factor to why we don’t feel that we’ll ever visit Cancun again was the atmosphere. If you’re a partier, I am certain you would give the atmosphere 5 stars, but if you’re someone like me who is looking more for a place to relax… Cancun is not the place for you. Bright lights, loud music, lots of drinks sum up Cancun night life. The streets are loud and littered with drunks anytime after 10. We were hoping for a place like Maui, but closer to home and less expensive… Boy were we ever wrong!

Don’t get me wrong, our vacation was an amazing getaway! We enjoyed a lot of quality time together to see new places and experience new things. We loved the experience, but will we go back to visit Cancun again? Probably not. We’ve heard that places nearby, such as Cozumel are much nicer and calmer. Maybe we’ll give those places a chance 😀.

Organic Manuka Honey Rescue Cream Review

I, like many others, suffer from eczema. I’ve had the skin condition since I was young, and it’s always been bothersome for me. It seemed to disappear in college but has made a comeback… unfortunately. The places I’m usually affected are my legs, shoulders, and inner elbows. Lately, however, the skin around my eyes and ears has been super dry.

In my search to find a product to calm my skin, I came across Organic Manuka Honey Rescue Cream by Organic Skincare Doctor. The blog I read about it on (found it through a random google search, and can’t find it now!) claimed that it cleared up eczema around the eyes within days. Of course, I was a bit skeptical because nothing has seemed to work for me.. especially that quickly. Not even prescription creams and ointments worked well for me. I ordered online from Vitamin World, later that same day and it arrived within one week.

As soon as I discovered the package on my doorstep, I tore it open and inspected the packaging.

I was thoroughly impressed by the claims. I immediately cleaned my face and applied the cream. My first impression was that the cream has a very pleasant honey fragrance. It’s not an overwhelming, sweet, cotton candy smell like you’d expect. It smells more like actual, raw honey. The cream is very rich, creamy, and white in color. I expected to apply it to my face and have to rub the white “out,” but I didn’t have to. It applied very smoothly!

Before applying the cream to my face (around 2PM), I had dryness around my eyes and forehead, a few small pimples sprinkled across my forehead (odd for me, as I have very dry skin), and a spot on the bridge of my nose where I had developed some weird sort of blister type thing … possibly eczema related? It’s now 10:30PM, and after inspecting my face, I can honestly tell you that I feel no tightness and dryness in my face. The small pimples on my forehead seem to be less inflamed, and the spot on my nose from the healing blister is nearly gone. The dry spots on my ears don’t feel as inflamed either. I can hardly believe it. It hasn’t even been 12 hours since I started using this product, and I ALREADY see results. (I just got through telling my husband that I wish I had taken before and after photos!)

Because I had such good results on my face, I just applied some of the cream to some dry spots on my legs and arms. I know I’ll have good results from those applications as well.

I’m definitely a convert, and will be using this product regularly on my skin :)! Organic Skincare Doctor has an entire Manuka Honey line, and I think I need to invest in a few other products from the line like their face scrub and mask! Please remember that my skin is very dry – if you have oily skin, this definitely is not a product for you.

Keeping in mind that this rescue cream is organic, this product should be used within 6 months. Don’t worry, though! With the price tag of $14.99 + S&H from Vitamin World, you won’t bust the bank to feel happy in your skin.

They’re Everywhere

I’ve had 5 people I know announce pregnancies on Facebook in the last 2 weeks, and one announce hers in the Capturing Kids’ Hearts (CKH) professional development I attended this week. Not to mention the woman pregnant with twins who was also in attendance!

… And you know what?
I think I’m okay with it. I’ll live. ❤️

We hope to start the adoption process this Fall.

On a non-baby note, I’ve lost a solid 5 pounds in the last 4.5 weeks and I’m feeling great. Headaches are at a minimum and I’ve only taken 4 Advils in the last 2 weeks!

I continue to eat healthy, and hubby and I walk 2-3 miles every evening. I also do 10-30 minutes of cardio/ab exercises daily.
